Lemon, Elderflower & Berry Cake (x4)

We fold fresh summer berries into a light, incredibly tender lemon sponge. While it’s still warm from the oven, we soak the sponge in a fragrant elderflower syrup locking in the moisture and giving it a beautiful floral sweetness. It is finally crowned with a sharp, zesty lemon icing and a scattering of berries.
